Increased gluten avoidance without a celiac diagnosis in the U. S.

In an article published in the January 2017 issue of Mayo Clinic Proceedings, Joseph A. Murray, M.D., a gastroenterologist at Mayo Clinic's campus in Rochester, Minnesota, reveals a surprising trend: A large portion of the U.S. population has independently begun avoiding gluten in their diets. Their actions make it extremely challenging to determine accurate trends of celiac disease incidents.

Dr. Murray also notes that there has been an increase in the diagnosis of celiac disease in the past six years.
